how to make french toast:On Mother’s Day Karma Of French Toast

'

The sun rose on a cloudless, cool morning in Central Illinois. I brewed some coffee and pulled one of the weathered Adirondack chairs fo face east… waiting for Mom to get up. My dog, Spyke, stalked an unseen critter rummaging in the thick ivy by the side wall and birds twittered in the trees.

It wasn’t long before I heard the screen door creak open and Mom strolled over to join me. We sat and enjoyed the dew on the grass marveling at the one glistening drop clinging to the top of nearly every blade.

We laughed as Spyke tilted his head from side to side, impossibly large ears keenly atuned to his prey… we never learned the identity of the critter but that wasn’t the point. The point is spending time with loved ones and enjoying the bounty in small things.

I have been richly blessed with parents that are fabulous.

I’ve been blessed with the best parents I know. However, today is the day we honor and express gratitude for our mothers.

My mother is my cheerleader and I know she will always, always take my side when bullies cross my path.

I’m going to make my special French Toast for her. It’s not my usual healthy breakfast but I’ll get her out for a walk later.

I’m going to make my special French Toast for her. It’s not my usual healthy breakfast but I’ll get her out for a walk later.

Here is my SECRET for four slices:

2 eggs, beaten

1 TBSP syrup

1/4 cup cream

2 TBSP melted butter

2 TBSP Grand Marnier

Mix all of the above ingredients together and dip bread in mixture, coating both sides. Melt another tablespoon of butter (or use canola oil) in a skillet on low heat. Brown the bread on both sides, adding butter as neccessary. Serve with warm maple syrup and top with whipped cream.

Mother’s Day isn’t just a commercial ploy dreamed up by retailers. It’s a day to make mothers feel special. I often tell her I love her but I’m not always great at telling her how much I appreciate her and her support. So Mom, thank you for being in my life and for all you do for me. May your days be richly blessed because you are good karma in motion.
